Our culinary journey starts with the Marmite of St Austell mussels, smoked haddock, samphire and saffron sauce. Then, a beautifully balanced dish of whipped cods’ roe with smoked mackerel, white beetroot, apple and campaillou crispbreads serve just the right amount of sweetness and acidity.
For mains, the rare breed chicken breast is a standout dish!
